Potato Candy Is the Wackiest Treat You’ll Ever Make…Don’t Knock It ‘Til You Try It!

Potato Candy traditionally comes from Ireland, and at times is flavored with vanilla or coconut. This version has been updated with a delicious peanut butter and nutella filling.

Don’t knock it until you try it, and this odd “candy” is just too easy to make with the help of a stand mixer. No baking is required after boiling the potatoes, and you’ll have plenty to share!

  • 1 small russet potato
  • 2 pounds powdered sugar
  • 1 cup peanut butter
  • 1 cup nutella
  1. Peel, boil and mash potato. Set aside half of the potato and put other half in a stand mixer. Add sugar, about a cup at a time, mixing thoroughly. Once all sugar is added, add the rest of the potato, a little at a time, until you reach a thick, dough-like consistency.
  2. Dust a cutting board or large piece of parchment paper with powdered sugar. Roll out dough, about 2 cups at a time, until about ¼-inch thick. Spread with an even layer of peanut butter on half and nutella on the other, then roll it up into a log shape, wrapping tightly in plastic wrap. Repeat until all dough is used. Place candy rolls in fridge.
  3. Once chilled and firm to the touch, remove from fridge and slice each roll into ½”-thick pieces.
  4. Makes approximately 3 pounds candy.
