Potato Candy traditionally comes from Ireland, and at times is flavored with vanilla or coconut. This version has been updated with a delicious peanut butter and nutella filling.
Don’t knock it until you try it, and this odd “candy” is just too easy to make with the help of a stand mixer. No baking is required after boiling the potatoes, and you’ll have plenty to share!
- 1 small russet potato
- 2 pounds powdered sugar
- 1 cup peanut butter
- 1 cup nutella
- Peel, boil and mash potato. Set aside half of the potato and put other half in a stand mixer. Add sugar, about a cup at a time, mixing thoroughly. Once all sugar is added, add the rest of the potato, a little at a time, until you reach a thick, dough-like consistency.
- Dust a cutting board or large piece of parchment paper with powdered sugar. Roll out dough, about 2 cups at a time, until about ¼-inch thick. Spread with an even layer of peanut butter on half and nutella on the other, then roll it up into a log shape, wrapping tightly in plastic wrap. Repeat until all dough is used. Place candy rolls in fridge.
- Once chilled and firm to the touch, remove from fridge and slice each roll into ½”-thick pieces.
- Makes approximately 3 pounds candy.
